A profile that is low in acidity with slick/full body that is syrupy sweet and notes of warm spice. Sourced from family owned farms that are organized around the Gayo Mandiri Cooperative. Most are smallholders, with the Coop having around 1,200 members and with the average farmer cultivating 2.5 acres of land and using micromills to depulp and dry their own coffee. The Coop provides technical assistance and training with the ultimate goal of improving the quality of the coffee, which translates into more profit for its members.
The coffee follows the traditional wet-hulled process from Indonesia. After harvesting, the coffee cherries are pulped, but instead of fully drying the parchment, the beans are partially dried to around 30–40% moisture. At this stage, the parchment layer is removed while the beans are still wet, which gives the beans their characteristic slightly bluish or gray-green color. The beans are then dried to the final moisture content.
This process produces coffees with a full, syrupy body, low to medium acidity, and earthy, herbal, or spicy flavor notes.
