Fresh From Our Farm: The Return of Yellow Pacamara

Our coffees from our farm in El Salvador have just arrived, and we couldn’t be happier!
Yes — coffees, plural — because our family farm in El Salvador produces several distinct varieties and micro lots, each grown, harvested, and processed with its own story and character. These aren’t just coffees; they’re the result of years of dedication, experimentation, and love for our craft.

Some of these lots are reserved for our Coffee Advent Calendar, and others for something truly special we’re preparing for next year. But right now, you can experience one of our proudest projects: the Yellow Pacamara.


A Rare Gem from Our Family’s Farm

This exceptional coffee grows on our 70-acre family farm, nestled in the volcanic highlands of Apaneca, El Salvador. It’s one of the projects closest to our hearts and one of the rarest varietals we’ve ever cultivated.

When we first discovered the Yellow Pacamara in Nicaragua back in 2017, we were captivated by its potential. We brought a few precious seeds home, planted them carefully in our nursery, and have been nurturing and repopulating the trees ever since. It’s been a slow journey, Pacamara trees take years to mature, but this harvest marks the moment that patience and persistence paid off.


What Makes It So Special

The Pacamara varietal is already celebrated in the specialty coffee world for its large beans, complex flavour profile, and smooth, buttery texture. But the Yellow Pacamara takes it even further, producing golden-yellow cherries and a brighter, tropical expression that’s completely unique.

This year’s micro lot was naturally processed and patio-dried in full sun by our partners at Coop Los Ausoles, preserving the vibrant fruit character of the beans. In the cup, you can expect notes of passion fruit, pineapple, and grapefruit, balanced by a creamy body and gentle acidity, a sensory journey that perfectly reflects the rich volcanic soil where it’s grown.
