Homemade Pumpkin Spice Syrup for Coffee: An Easy Fall Recipe

This past weekend, we had a big family celebration. Naturally, I was immediately nominated to take charge of the coffee bar.
I wanted it to feel generous, welcoming and a little special, so I stocked it with everything our guests might need: freshly roasted coffee, different milks, chocolate sticks, cinnamon sticks, pastries and plenty of cozy toppings.
But the ingredient that brought the entire coffee bar together was a batch of homemade pumpkin spice syrup for coffee.
Made with real pumpkin, brown sugar, vanilla and warm spices, this simple syrup turns an everyday cup of coffee into a comforting fall drink. It is also surprisingly easy to make.
A Family Coffee Bar and a Very Special Guest
Many of our family members and friends travelled for the celebration, including Alejandro’s longtime friend Dale Harris, who visited us from the United Kingdom.

We spent a morning together at the roastery sharing stories, exchanging ideas and, of course, drinking some remarkable coffee.
There is something special about a friendship that continues across years and countries, fuelled by a shared curiosity and love for coffee.

Why I Made Homemade Pumpkin Spice Syrup
When it was time to prepare the coffee bar, I wanted it to show our guests how much we appreciated them making the effort to celebrate with us.
A homemade addition felt more personal than simply setting out bottled flavouring.
And what feels more like fall than pumpkin, cinnamon, vanilla and brown sugar stirred into a warm cup of coffee?
This pumpkin spice syrup also makes a lovely addition to a Thanksgiving gathering, fall brunch or self-serve coffee bar. Guests can add as little or as much as they like, making it easy for everyone to customize their drink.
What Is Pumpkin Spice Syrup?
Pumpkin spice syrup is a sweet, concentrated coffee flavouring made with pumpkin puree, sugar, vanilla and warm spices.
Unlike many store-bought syrups, this version contains real pumpkin and ingredients you probably already have at home.
It can be added to:
- Brewed coffee
- Espresso
- Lattes
- Cappuccinos
- Cold brew
- Iced coffee
- Steamed milk
The recipe takes approximately 10 minutes to prepare and can be stored in the refrigerator for later use.
Homemade Pumpkin Spice Syrup Recipe
Ingredients
- ½ cup pumpkin puree, not pumpkin pie filling
- ½ cup brown sugar
- ½ cup water
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
You can replace some or all of the brown sugar with maple syrup for a slightly different sweetness and a deeper fall flavour.
How to Make Pumpkin Spice Syrup
1. Combine the ingredients
Add the pumpkin puree, brown sugar, water, pumpkin pie spice and vanilla to a small saucepan. Whisk until evenly combined.
2. Heat the mixture
Place the saucepan over medium heat and continue stirring as the sugar dissolves.
3. Simmer briefly
Once the mixture begins to bubble gently, reduce the heat and let it simmer for approximately three minutes. Stir regularly so the pumpkin does not stick to the bottom.
4. Let it cool
Remove the saucepan from the heat and allow the syrup to cool slightly.
5. Refrigerate
Transfer it to a clean, airtight container and store it in the refrigerator for up to one week. Stir or shake it before using because the real pumpkin may settle.
How to Make a Pumpkin Spice Latte at Home
Once the syrup is ready, making a homemade pumpkin spice latte takes only a few minutes.
Ingredients for One Latte
- One or two shots of espresso, or ½ cup strongly brewed coffee
- 1–2 tablespoons homemade pumpkin spice syrup
- Approximately ¾ cup milk
- Pumpkin pie spice or cinnamon for serving
- Whipped cream, optional
Pumpkin Spice Latte Instructions
1. Brew the coffee
Prepare one or two espresso shots. You can also use strongly brewed coffee when an espresso machine is not available.
2. Add the syrup
Stir one to two tablespoons of pumpkin spice syrup into the hot coffee. Start with one tablespoon and add more according to your preferred sweetness.
3. Froth the milk
Warm and froth your milk until smooth and foamy.
4. Assemble the latte
Pour the milk over the pumpkin-coffee mixture. Finish with whipped cream and a light sprinkle of pumpkin pie spice or cinnamon.
That is it—you now have a cozy, café-style pumpkin spice latte made at home with real pumpkin and freshly brewed coffee.
What Coffee Works Best in a Pumpkin Spice Latte?
Choose a coffee with enough body and flavour to remain noticeable alongside the pumpkin and spices.
A smooth medium or medium-dark roast usually works especially well. Coffees with chocolate, caramel or nutty notes complement the brown sugar and warm spices without making the drink overly sweet.
For the best flavour, brew the coffee slightly stronger than usual. The coffee should still be present after the syrup and milk are added.
The goal is not to hide the coffee. It is to create balance between the espresso, sweetness, pumpkin and spice.
Tips for a Better Homemade Pumpkin Spice Latte
Use pumpkin puree, not pie filling
Pumpkin pie filling already contains sugar and seasonings, which can make the final syrup overly sweet or unbalanced.
Adjust the sweetness
Begin with one tablespoon of syrup per drink. You can always add more, but you cannot remove it once it is mixed in.
Use freshly roasted coffee
Fresh coffee contributes more aroma and flavour, helping it remain noticeable alongside the milk and syrup.
Make the syrup ahead
Prepare the pumpkin spice syrup the day before a gathering. This makes it easy for guests to build their own drinks without creating extra work during the event.
Create a self-serve coffee bar
Set out the syrup beside freshly brewed coffee, milk, cinnamon sticks, chocolate, pastries and mugs. Add a small spoon or label explaining that guests can use one to two tablespoons per drink.
