Day 22 Magical Cup of Coffee
COFFEE: Uganda Sipi Falls
NOTES: Chocolate, Dried Raisins, Burnt Sugar
The coffee comes from The Sipi Falls coffee project, named after a trio of majestic waterfalls, on Mount Elgon near the border between Uganda and Kenya. The Sipi Falls wet mills was established in 1999 to strengthen quality coffee production in the region and create a sustainable income for farmers. Currently, 8,000 organic and diversified farms around the region send their coffee to the wet mill. The coffee beans are fully washed and sun dried in raised beds. The main varietal is SL28, a variety developed by Scottish Labs which is among the most well-known and well-regarded varieties of Africa. It was develop for Kenya, where it was originally selected in the 1930s, and it has spread to other parts of Africa. The cup is a light, juicy body brew of low acidity and a pleasant sweetness. You can taste notes of chocolate and dried fruits, with a hint of burnt sugar...as it cooled, I also got a hint of mango.
