A profile that is low in acidity with slick/full body that is syrupy sweet and notes of warm spice. Sourced from family owned farms that are organized around the Gayo Mandiri Cooperative. Most are smallholders, with the Coop having around 1,200 members and with the average farmer cultivating 2.5 acres of land and using micromills to depulp and dry their own coffee. The Coop provides technical assistance and training with the ultimate goal of improving the quality of the coffee, which translates into more profit for its members. We usually roast our Sumatra darker, but decided to roast it at a medium roast to bring out more notes and allow for a nice comparison with other coffees in the advent calendar.
